BEEF CASSEROLE WITH LEEKS IN RED WINE SAUCE

End up your food cravings through preparing beef casserole with leeks in red wine sauce. This dish is filled with delicious taste that truly matches to your regular meal. Everyone find it easy to prepare this dish because of its simple cooking ingredients and instructions.

Preparation Method :

  • Toss the beef, smoked bacon, onions, garlic and mushrooms into a large bowl.
  • Sprinkle the mixture with the olive oil and leave to stand for atleast 2 hours.
  • Preheat the oven to Gas Mark 4/180°C/350°F.
  • Heat the beef dripping in a large flameproof casserole, add the steak mixture and brown for 5 minutes.
  • Stir in the seasoned flour, and season it again with salt and pepper.
  • Add the claret, beef stock, herbs and tomato puree, blending them all together thoroughly.
  • Cover the casserole with a piece of cooking foil or a lid and cook in the centre of the oven for 2 hours 30 minutes before the end of the cooking time, mix in the leeks and return to the oven,uncovered.

INGREDIENTS

  • 750 grams sirloin of beef, trimmed and cut into thin strips
  • 250 grams rindless smoked bacon, chopped
  • 4 large onions, peeled and sliced
  • 3 cloves garlic, peeled and crushed
  • 250 grams small button mushrooms
  • 3 tablespoons olive oil
  • 25 grams beef dripping
  • 50 grams flour, seasoned
  • Salt and freshly ground black pepper (to taste)
  • 275 ml good claret
  • 150 ml Basic Beef Stock
  • 1 teaspoon fines herbes
  • 1 tablespoon tomato puree
  • 500 grams of leeks, washed and roughly sliced
