PROVENGALE LAMB CHOPS
This healthy dish is suited for you and your family and it only takes forty-five minutes to prepare.You only need few ingredients for this recipe but guaranteed that you and your family will certainly love it. You only need to prepare olive oils, lamb chops (trimmed of fat), potatoes which was peeled and sliced into thick rounds, garlic peeled and minced, thyme sprig, bay leaves, rosemary sprig, of course don’t forget salt and pepper to taste, about 500 ml of boiling hot beef stock, black olive stoned and chopped parsley. You only need to combine all ingredients and your dish is set. You and your family will surely enjoy your meal.

Preparation Method :
- Heat the oil in a frying pan (skillet), add the chops and fry briskly for 1 to 2 minutes on each side until browned.
- Remove from pan and set aside. Lower the heat and add potatoes to the pan with the garlic, thyme, bay leaf, rosemary and salt and pepper to taste.
- Place the chops on top and add enough stock just to cover them.
- Cover the pan and cook over moderate heat for 25 to 30 minutes or until the lamb is tender.
- Check frequently to see that the mixture is not sticking to the bottom of the pan, and press the chops into the potatoes occasionally to crush them to a puree.
- Just before serving, chop the olives and add to pan with parsley. Heat through for 1 to 2 minute.
- Serve immediately.

- 3 tablespoons Cooking oil
- 4 large lamb chops, trimmed of fat
- 4 potatoes, peeled and sliced into thick rounds
- 4 cloves garlic, peeled and crushed
- 2 thyme sprig
- 2 bay leaves
