MILANESE FRIED VEAL CHOPS

Preparation Method :
- Lightly pound the veal with a meat tenderizer so that it is of even thickness. Dip in the eggs and then in the bread crumbs. Press down well so that the bread crumbs stick all over.
- Heat the butter and oil in a large frying pan over medium-high heat. Add the chops and fry until a thick golden crust forms, 5 minutes.
- Turn and cook in the same way on the other side. If the chops don't all fit in the pan in a single layer, cook them in two pans or in two batches.
- Drain well on paper towels and season with salt. Garnish with the lemon wedges and serve hot.

- 4 large eggs, lightly beaten
- 400 grams fine dry bread crumbs
- 150 grams butter
- 2 tablespoon sesame oil
- Salt to taste
- Lemon wedges, to garnish
