LAMB CHOPS WITH PIQUANT BUTTER

Preparation Method :
- To Make Butter: Combine butter with anchovies, garlic, parsley and lemon juice and chill until firm.
- Season lamb chops with salt and black pepper to taste.
- Brush chops with melted butter and cook in a frying pan over a medium heat for 3 - 5 minutes on each side or until cooked.
- Arrange the lamb on a serving platter, top with curls of butter and serve with steamed potatoes.

- 1 kg lamb chops
- 2 tablespoon butter, melted
- 1 kg new potatoes, steamed
- Freshly ground black pepper and Salt, to taste
- Piquant Butter
- 2 tablespoons chopped fresh parsley
- 1 tablespoon lemon juice
- 50 grams butter
- 2 anchovy fillets, mashed
- 1 clove garlic, crushed
