LAMB CHOPS EN CROUTE

Preparation Method :
- Grill chops under a preheated hot grill for about 3- 5 minutes on each side, until the meat turns brown but pink in the centre.
- Lightly fry bread with little olive oil in a frying pan until golden brown, drain and keep it aside.
- Heat 2 tablespoons of olive oil in pan, add onion, garlic and parsley and fry until onion is golden brown.
- Add water and wine, adjust seasoning with salt and black pepper to taste. Simmer for about 5 minutes.
- Place a lamb chop on top of each croute, spoon over sauce and sprinkle with some chopped parsley and serve.
INGREDIENTS
- 250 ml dry white wine
- 4 thick lamb loin or chump chops
- 4 thick slices of bread
- 2 tablespoons chopped fresh parsley
- 3 tablespoon hot water
- 50 ml olive oil
- 1 onion, finely chopped
- 1 clove garlic, crushed
- Freshly ground black pepper and Salt
