- Preheat the oven to 350°F (180°C/gas 4). Layer the sausages, potatoes, pineapple chunks, onion, carrots, and tomatoes in a casserole dish.
- Add enough water to the pineapple juice. Put the pineapple liquid in a small bowl.
- Add the brown sugar and cornstarch and stir until smooth. Season with salt and pepper. Add the remaining pineapple liquid and stir until smooth.
- Pour the cornstarch mixture over the ingredients in the casserole. Top with the butter.
- Cover and bake until tender, about 1 hour. Serve hot.
