SAUSAGE AND BEAN CASSEROLE
If you’re running out of time in preparing your dish, sausage and bean casserole is a very simple dish can do. Just cook the sausage and bacon, and mix the other ingredients. The taste of this dish is bursting with different flavour. It can be serve with brown rice and green salad.

Preparation Method :
- Cook the sausages and bacon in a large saucepan over low heat until the fat begins to run then increase the heat and cook until golden.
- Remove with a slotted spoon and reserve.
- Add the onion, celery and green pepper to the fat in the saucepan and cook until the onions arc- translucent.
- Stir in the flour then gradually add the hot stock.
- Bring to the boil, stirring constantly. Add kidney beans, carrots, bay leaf, fried bacon and sausage, salt and pepper.
- Cover the pan and simmer gently for about 30 minutes.
- Serve with brown rice and a green salad.
INGREDIENTS
- 750 grams low-fat pork sausages
- 200 grams lean bacon, derinded and chopped
- 2 large onion, peeled and chopped
- 4 celery stalks, sliced
- 2 green pepper, cored, deseeded and chopped
- 4 tablespoons plain unbleached white flour
- 1 liter chicken stock
- 750 grams kidney beans
- 8 carrots, peeled and sliced
- 2 bay leaves
- Salt
- Freshly ground black pepper
