MUSTARD BEEF CASSEROLE

Preparation Method :
- Preheat the oven. Toss the meat in seasoned flour. Heat the oil in a flameproof casserole and saute the onion.
- Add the meat and cook until browned.
- Stir in the carrots, then the beer and stock. Add mustard and seasoning.
- Bring to the boil, cover and cook in the oven for 1½ hours.
- Meanwhile, blend the remaining mustard with the margarine and spread over the slices of French bread.
- Place on top of the casserole, mustard side up. Return to the oven, uncovered, for 20 minutes until piping hot.
- Serve the casserole sprinkled with chopped parsley.

- 1 kg lean braising steak, trimmed and cubed
- 2 tablespoon plain whole meal flour
- Salt
- Freshly ground black pepper
- 4 tablespoons Cooking oil
- 2 large onions, peeled and sliced
- 8 carrots, peeled and sliced
- 500 ml beer
- 8 tablespoons beef stock
- 6 teaspoons wholegrain mustard
- 2 teaspoon margarine
- 1 stick brown French bread, sliced
- Chopped parsley, to garnish
