LAMB AND VEGETABLE CASSEROLE

Preparation Method :
- Take a piece of fat from the lamb and rub over the base of a heavy pan.
- Add the lamb and cook gently until the meat is browned on all sides.
- Add the onions and garlic and continue cooking gently for 5 minutes, stirring occasionally.
- Add the carrots, peppers, tomato juice and salt and pepper to taste, then cover and simmer for 1 hour.
- Add the potatoes and beans to the pan, cover and continue simmering for 30 minutes.
- Taste and adjust the seasoning.
- Serve hot with a seasonal green vegetable.
INGREDIENTS
- 1½ kg boned leg or shoulder of lamb, trimmed of fat and cut into cubes
- 4 onions, peeled and chopped
- 2 clove garlic, peeled and crushed
- 4 carrots, peeled and sliced
- 4 green peppers, cored, deseeded and chopped
- 500 ml tomato juice
- Salt
- Freshly ground black pepper
- 4 potatoes, peeled and diced
- 500 grams French beans, diced
