KIDNEY AND MUSHROOM CASSEROLE

This dish use grilled kidney of a lamb. After you grill the kidney transfer it to a casserole and put the mushroom. You can also add sherry to enhance the aroma of your kidney and mushroom casserole. You can top it with ring onion to make it more pretty.

Preparation Time :
30 minutes

Cooking Time :
50 minutes

Preparation Method :

  • Slice or halve the kidneys. Place under a preheated hot grill and cook for 1 minute on each side.
  • Transfer to a casserole dish and add the onions, stock, sherry, salt and pepper.
  • Stir in the mushrooms. Cover and cook in a preheated moderately hot oven for about 40 minutes or until the kidneys are tender.
  • Serve with plain boiled rice. 

INGREDIENTS

  • 750 grams lambs' kidneys, skinned and cored
  • 200 grams onions, peeled and sliced
  • 500 ml beef stock
  • 200 ml sherry
  • Salt
  • Freshly ground black pepper
  • 500 grams mushrooms, stalks removed, sliced if large
