CHILLI-BEAN CASSEROLE

Preparation Method :
- Melt butter in a saucepan over a medium heat, add onion, then mince and cook, stirring constantly to break up any large chunks, until well browned.
- Stir in tomatoes with stock, pasta, herbs, chilli powder, Worcestershire sauce.
- Adjust seasoning with salt and black pepper to taste. Simmer for 20 - 30 minutes, add more water and keep stirring.
- When meat is cooked and pasta is tender, stir in kidney beans and heat through. Sprinkle with chopped parsley.
INGREDIENTS
- 250 grams red kidney beans, drained
- 2 tablespoon butter
- 750 grams lean beef mince
- 450 grams canned tomatoes, drained and chopped
- 250 ml hot beef stock
- 100 grams pasta shells
- 1 onion, finely chopped
- 1 tablespoon chopped fresh mixed herbs
- 1 teaspoon chilli powder
- 1 teaspoon Worcestershire sauce
- Salt and freshly ground black pepper
- Finely chopped fresh parsley, for garnish
