BEEF & RED WINE CASSEROLE

Preparation Method :

  • Season the flour generously with salt and pepper. Sprinkle over the beef, turning to coat. Heat the oil in a deep saucepan over high heat. Add the beef and sauté until browned, 10 minutes.
  • Add the onions and sauté until they start to brown, 4-5 minutes. Add the thyme, wine, and stock. Bring to a boil, then decrease the heat, cover, and simmer for 1 hour.
  • Add the carrots and chestnuts, season with salt and pepper, and simmer until the meat is very tender, about 1 more hour.
  • Serve hot with rice or potatoes.

INGREDIENTS

  • 4 tablespoons all-purpose (plain) flour
  • Salt and freshly ground black pepper
  • 500 grams beef, cut into cubes
  • 4 tablespoons sesame oil
  • 3 onions, coarsely chopped
  • 3 sprigs thyme
  • 300 ml dry red wine
  • 400 ml beef stock
  • 4 carrots, sliced
  • 500 grams cooked, peeled chestnuts, freshly roasted or vacuum packed
  • Freshly cooked rice or potatoes, to serve
