BEEF & RED WINE CASSEROLE

Preparation Method :
- Season the flour generously with salt and pepper. Sprinkle over the beef, turning to coat. Heat the oil in a deep saucepan over high heat. Add the beef and sauté until browned, 10 minutes.
- Add the onions and sauté until they start to brown, 4-5 minutes. Add the thyme, wine, and stock. Bring to a boil, then decrease the heat, cover, and simmer for 1 hour.
- Add the carrots and chestnuts, season with salt and pepper, and simmer until the meat is very tender, about 1 more hour.
- Serve hot with rice or potatoes.
INGREDIENTS
- 4 tablespoons all-purpose (plain) flour

- 500 grams beef, cut into cubes
- 4 tablespoons sesame oil
- 3 onions, coarsely chopped
- 3 sprigs thyme
- 300 ml dry red wine
- 400 ml beef stock
- 4 carrots, sliced
- 500 grams cooked, peeled chestnuts, freshly roasted or vacuum packed
- Freshly cooked rice or potatoes, to serve
