Preparation Method :
- Place thin cream and milk in a double boiler and simmer over low heat till milk is fully scalded.
- Beat egg yolks with sugar and salt till thick and add to scalded milk, beating all the time.
- Now place this over the bottom part of the double boiler with hot water in it and stir-cook till the contents coat the back of the spoon.
- Remove, cool and refrigerate for an hour.
- Whip the cream and fold into the chilled custard and pour into an ice-cube tray and freeze till almost set.
- Remove into a bowl and beat till smooth.
- Return to the tray and freeze until fully frozen and set.
- Cover with foil or wrap film and serve with Apricot Sauce.

- 2 teaspoon vanilla essence
- 150 ml full cream
- 100 ml milk
- 75 grams castor sugar
- 2 egg yolks
- A pinch of salt
