PINEAPPLE SORBET

Serves :
4

Preparation Time :
45 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Heat water and sugar and cook until sugar is dissolved. Simmer for 8-10 minutes until a thin syrup forms.
  • Cut pineapple in half lengthwise leaving the leaves intact.
  • Remove the flesh. Place the pineapple shells in the refrigerator until needed.
  • Peel limes, remove the white pith and cut in quarters.
  • Puree lime and pineapple in a blender.
  • Cool and add the sugar mixture to the pineapple mixture. Pour into freezer trays. Freeze until set.
  • Put the mixture in the blender and blend till breaking up the crystals. Pour back into the freezer trays. Cover with foil and freeze.
  • Tip out sorbet. Cut into large dice and pile into pineapple shells and serve garnished with mint sprigs.

INGREDIENTS

  • 400 ml water
  • 150 grams sugar
  • 1 medium pineapple
  • 2 limes
  • Mint sprigs for garnish
