NUT FRUIT ICE-CREAM

Cooking Time :
45 minutes

Preparation Method :

  • Heat milk and sugar together in a saucepan, stirring to dissolve the sugar.
  • Mix corn flour with the egg yolks and cream and stir into the milk. Cook, stirring continually, until thickened.
  • Stir in the remaining ingredients. Pour into a wet ice-cream or other suitable freezing tray. Cover with foil and freeze.
  • Remove and break up with a fork, stir well and refreeze.
  • Remove from freezer 10-20 minutes before serving. Cut into diamond shapes and return to the freezer.

INGREDIENTS

  • 1 litre milk 
  • 200 grams white sugar
  • 5 tablespoons corn flour
  • 4 egg yolks, lightly beaten 
  • 500 ml cream
  • 4 teaspoons rosewater 
  • 200 grams toasted desiccated coconut 
  • 200 grams chopped nuts (pistachios or almonds) 
  • 200 grams chopped raisins
  • 6 red glace cherries, finely chopped
