CARAMEL ICE CREAM WITH ALMONDS

Preparation Time :
20 minutes

Preparation Method :

  • In a heavy based pan, put sugar and water and stir-cook till sugar is dissolved.
  • Then cook till it is golden brown in colour. Cool.
  • Whisk egg whites with almond essence until thick.
  • Then fold in half the whipped cream and icing sugar.
  • Put in a freezer tray and freeze till nearly set.
  • Remove from freezer and put in a bowl.
  • Whip lightly and fold in the remaining cream, cooked caramel and half the almonds.
  • Place in the freezer tray and top with remaining almonds and freeze again till firm.

INGREDIENTS

  • 1 tablespoon icing sugar
  • 3 tablespoon flaked and chopped almonds
  • 75 grams sugar
  • 75 ml water
  • 2 egg whites
  • 150 ml thick cream
  • Few drops almond essence
