- Mix the Onions, Red chillies, Green chillies, White sesame seeds, Dry coconut, Jaggery, Tamarind, Ginger, Garlic, Jeera, Roasted peanuts, Garam masala, Turmeric, Curry leaves, Coriander leaves and salt.
- Grind the above in a mixie.
- Slit the brinjals in the middle into 4 halves but not completely so that it will be easy to stuff the masala.
- Stuff the brinjals with the ground mixture and keep aside.
- Heat a non stick pan and arrange all the stuffed brinjals in the pan and then add a cup of oil and the remaining masala mix.
- Slightly stir it and add 3/4th cup water so that the masala does not stick to the pan and cover the lid and Cook for 15 minutes.
- When oil comes to the surface remove from flame and serve.

- 250 grams Small round brinjals
- 2 medium sized Onions
- 5 Red chillies
- 4 Green chillies
- 1 teaspoon White sesame seeds
- 1 teaspoon Dry coconut powdered
- 1 teaspoon Jaggery powdered
- 1 Amla sized Tamarind
- ½ inch Ginger
- 5 cloves Garlic
- ½ teaspoon Jeera
- 2 teaspoon Roasted peanuts
- 1 teaspoon Garam masala
- ¼ teaspoon Turmeric
- 10 Curry leaves
- 2 teaspoon Coriander leaves
- Salt to taste
- 200 ml Sesame Oil
