MEDITERRANEAN VEGETABLE SANDWICH

Mediterranean vegetable sandwich – best grilled recipe suited for the whole family! Preparing this menu is not so complicated. All you have to do is to set up its palatable ingredients like red ball pepper, eggplant, mozzarella cheese and other seasonings that add to its tempting taste.

Preparation Method :

  • With a pastry brush, lightly coat the vegetables with the olive oil.
  • Preheat a grill pan over medium heat until very hot. Transfer all the vegetables to the pan and grill about 5 minutes on each side, or until softened.
  • Transfer to a cutting board or plate. Place the focaccia slices in the grill pan cut side down and toast for atleast 3 minutes, or until slightly charred.
  • Divide the mozzarella on 2 slices of focaccia.
  • Divide and stack equal amounts of the eggplant, zucchini, mushroom, and bell pepper on the 2 slices, top with equal portions of the basil.
  • Cover with the remaining two slices of focaccia. Serve immediately.

INGREDIENTS

  • 1 medium red ball pepper,( cored, seeded, and cut into ½ inch strips)
  • 1 medium egg plant,( peeled and cut into ½ inch thick slices)
  • 1 medium zucchini, (cut into 1/8 inch thick slices)
  • 1 medium Portobello mushroom,( gills and stem removed and sliced into ¼ inch thick strips)
  • 50 ml light olive oil
  • 2 sandwich sized slices focaccia halved lengthwise
  • 250 grams sliced or shredded mozzarella cheese
  • 8 large fresh basil leaves
