ITALIAN-STYLE GRILLED AUBERGINE

Preparation Method :
- Build a hot charcoal or wood fire in a barbecue or preheat a gas barbecue to 200°C (400°F). Rub the grill rack with oil.
- Cut aubergines lengthways into slices 12 mm ( ½ inch) thick. Brush both sides with olive oil and season with salt and pepper.
- Cook on the barbecue until golden brown and crisp, 10 minutes. Turn and cook until golden brown and crisp on second side, about 4 minutes. Remove from barbecue and set aside.
- Put remaining olive oil in a shallow baking dish with parsley, thyme, vinegar, and garlic. Add warm aubergine slices and let stand for 1 hour, then turn and let stand 1 hour more.
- Serve at once, or cover and refrigerate for up to 1 week. Serve at room temperature.
