GRILLED COURGETTE SKEWERS WITH CORIANDER

Preparation Method :
- Soak 8 wooden skewers in water to cover for 30 minutes. Set aside.
- Build a hot charcoal or wood fire in a barbecue or preheat a gas barbecue to 200°C (400°F). In a bowl, combine courgette slices with oil, oregano, coriander, chilli powder, and 1 teaspoon salt. Turn to coat and let stand for 30 minutes.
- Thread courgettes sideways onto skewers. Grill 5 minutes on one side, or until lightly browned, then turn and cook other side until lightly browned and tender, 5 minutes. Brush with more marinade if desired.
- In a bowl, mix together yoghurt, cumin, cayenne pepper, and salt.
- Serve skewers with yoghurt alongside, garnished with a few fresh coriander sprigs.

- 300 ml whole or low-fat natural yoghurt
- 2 teaspoon ground cumin
- 1 teaspoon cayenne pepper
- Fresh coriander sprigs for garnish
