Preparation Method :
- Use 15 grams/1/2 oz (1 tablespoon) of the butter to grease a shallow ovenproof dish. Cook the broccoli in boiling, salted water for 5 to 8 minutes. Drain and arrange in the dish.
- To make the sauce, melt the remaining butter in a pan, stir in the flour and cook for 1 minute.
- Remove from the heat and gradually blend in the milk.
- Cook the sauce, stirring, until it thickens. Stir in the grated cheese, mustard and salt and pepper to taste.
- Pour the sauce over the broccoli, arrange the tomatoes around the edge and sprinkle with breadcrumbs. Cook under a preheated moderate grill (broiler) for 10 minutes until the top is golden and bubbling.
- Serve with whole wheat bread.

- 600 ml milk
- 150 grams mature cheese, grated
- 1 teaspoon made mustard
- 4 tomatoes, quartered
- 50 grams dry breadcrumbs
