SOFT-SHELL CRAB ON ARUGULA WITH SUN-DRIED TOMATOES
This mouth-watering soft shell crab on arugula with sun dried tomatoes is extremely best for all events. You can also serve this for your daily meals like dinner and lunch. One of the best thing about this grilled recipe is its appetizing and irresistible taste.

- Soak the crabs in milk for about one hour, then gently rinse them under cold running water and pat dry with a paper towel.
- Lightly brush the shells of the crabs with olive oil and season them with salt and pepper.
- Preheat a grill pan over medium heat until very hot. Add the crabs shell side down and grill for 4-5 minutes.
- Brush the underside of the crabs with olive oil, season with salt and pepper and turn them over. Grill them for another 5 more minutes.
- In a medium glass bowl, toss arugula with sun-dried tomatoes.
- The oil remaining on the tomatoes will lightly coat the arugula.
- Move the soft-shell crabs to the edge of the pan, turn off the heat, and add the arugula mixture to the pan.
- Toss gently and place equal amounts of the arugula mixture in the center of two warm dinner plates.
- Top each with two of the crabs and drizzle with lemon beurre blanc.

- 4 medium soft-shell crabs, cleaned
- Milk, for soaking
- 50 ml light olive oil
- Freshly ground pepper and Salt ( to taste )
- 900 grams arugula,( tough stems removed, washed and dried)
- 100 grams oil-packed sun-dried tomatoes,( drained and coarsely chopped)
- Lemon Beurre Blanc
