RED SNAPPER WITH SPICY AIOLI

- To make the aioli: In a food processor or blender, combine the mayonnaise, roasted garlic, green chilies, lime juice, salt, and pepper. Puree until smooth.
- The aioli may be prepared up to 1 day ahead and stored in an airtight container in the refrigerator. Bring to room temperature before use.
- Preheat a grill pan over medium heat until very hot. Lightly brush the red snapper fillets with olive oil and season both sides with salt and pepper.
- Place in the grill pan and cook for about 5 minutes. Turn and cook for another 5 more minutes. Transfer to warm plates and top with spicy aioli and green onions.

- 250 grams prepared mayonnaise
- 1 clove Roasted Garlic
- 1 tablespoon canned diced green chiles
- 2 tablespoons fresh lime juice
- Salt and freshly ground pepper
- 1 tablespoon finely chopped green onions (white part only)
- 200 grams red snapper fillets
- 1 tablespoon light olive oil
- Salt and freshly ground pepper
