PRAWNS WITH FENUGREEK LEAVES

Preparation Method :

  • Marinate the prawns with the lemon juice and salt. Leave for about 20-30 minutes. Drain and rinse them. Return to the bowl.
  • Stir in the marinade into the prawns. Marinate for an hour or two in the refrigerator. Bring back to room temperature, discard the marinade.
  • Preheat the grill or the oven to 190°C/375°F/Gas 5. Oil the rack or a baking sheet and place in the oven to preheat.
  • Thread the prawns on to soaked wooden skewers and cook for about 2-3 minutes on a grill, turning halfway through cooking. Drizzle with the extra lemon juice and serve hot.

INGREDIENTS

  • 500 grams raw prawns, washed, shelled and de-veined
  • 50 ml lemon juice
  • A pinch of salt

Marinade

  • 2 tablespoon ginger-garlic paste
  • 150 ml low-fat yogurt, beaten 
  • 2 tablespoon gram flour
  • ½ teaspoon red chilli powder
  • ½ teaspoon carom seeds
  • ½ teaspoon turmeric powder
  • 2 teaspoon coriander powder
  • A handful of fresh fenugreek leaves, chopped
  • Lemon juice, to taste
  • Salt to taste
