Preparation Method :
- To make the vinaigrette: Combine the orange juice, lemon juice, lime juice, and vinegar In a food processor or blender.
- Slowly add the olive oil with the motor running and continue processing until emulsified.
- Transfer the mixture to a small glass bowl and stir in the red onion, bell pepper, salt and pepper.
- Season both sides with salt and pepper.
- Preheat a grill pan over medium heat until very hot. Place the fillets in the grill pan and cook for 5 minutes on each side or until golden brown.
- Transfer the fillets to two warm dinner platter and drizzle with Citrus-Raspberry Vinaigrette.
- This vinaigrette may be prepared 1 day in advance and refrigerated in an airtight container.

- 1 tablespoon fresh orange juice
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh lime juice
- 1tablespoon raspberry vinegar
- 50 ml light olive oil
- 1 tablespoon minced red onion
- 1 tablespoon minced red bell pepper
- Salt and freshly ground pepper
- 175 grams mahi-mahi fillets
- Salt and freshly ground pepper
