KEY LIME SEA BASS WITH TOASTED LEEKS

Preparation Method :
- Combine the lime zest, lime juice, ginger, and honey in a small glass or non- reactive metal bowl.
- Stir together to make a paste. Rub the paste on the sea bass and let it sit, loosely covered, for 30 minutes.
- Season the sea bass with salt and pepper and set aside.
- Rinse leeks well in a sifter and separate them into individual rings. Dry the leeks thoroughly and toss them with the olive oil.
- Preheat a grill pan over medium heat until very hot. Add the sea bass and the leeks at the same time, on opposite sides of the pan.
- Toss the leeks frequently using the tongs. Cook the sea bass until nicely browned, about 5-6 minutes. Turn and cook for another 5 more minutes.
- Transfer the fish to two warm platter and top with the leeks. Serve immediately.

- 175 grams sea bass fillets
- 2 tablespoons grated lime zest
- 60 ml fresh Key lime juice
- 2 teaspoons finely grated fresh ginger
- 1 tablespoon honey
- 2 medium leeks, (white and light green parts only, thinly sliced)
- 1 tablespoon light olive oil
- Freshly ground pepper and Salt
