GRILLED SARDINES

Grilled Sardines with Oregano is one of the few exotic, healthy dishes you must not ignore! It’s really different because of its ingredients as follows; large sardines, maldon, olive oil, dried oregano, lemon juice and garlic! Once you follow all instructions on how to prepare for it, you can be proud of your cuisine in the end!

Preparation Method :

  • Rinse the sardines under a cold tap and pat dry. Cover a grill rack with foil and arrange the sardines on top. Heat the grill.
  • Put a good pinch of salt and a generous grinding of black and white peppers into a bowl. Whisk in the oil, then the lemon juice, and then add the dried oregano and garlic.
  • Brush each fish with a little of the oil mixture, then cook under a hot grill for 3 to 4 minutes.
  • Turn the fish over and brush with the remaining mixture, then cook for a further 3 to 4 minutes until crisp.
  • Serve at once with lemon wedges and thinly sliced brown bread and butter.

INGREDIENTS

  • 3 kilogram large sardines, thawed if frozen 
  • Maldon or sea salt 
  • Freshly ground black and white pepper 
  • 200 ml IDHAYAM sesame oil 
  • 6 tablespoons lemon juice 
  • 2 tablespoon dried oregano
  • 2 clove garlic, peeled and crushed 

Garnish

  • Lemon wedges 
  • Thinly sliced brown bread and butter
