GRILLED SALMON STEAKS

Preparation Method :
- Preheat grill to hot. Brush the salmon on both sides with oil and sprinkle with salt and black pepper, to taste.
- Place salmon under grill and cook for 4-5 minutes each side.
- Serve with Buerre Blanc Tomate and steamed new potatoes.
- Buerre Blanc Tomate : Heat the stock, wine, tomatoes and basil to boiling in a saucepan over medium heat.
- Simmer to low flame and cook, stirring occasionally, until the mixture is reduced to ½ cup.
- Reduce heat to low and whisk in 1 piece of butter at a time. Season to taste with salt and pepper.
- Stir in the lemon juice. Just before serving, stir in the chives.
- Serve hot.
INGREDIENTS
- 4 salmon cutlets or fillets, each about 1 inch thick
- 1 teaspoon vegetable or olive oil
- Freshly ground black pepper and Salt, to taste
- Buerre Blanc Tomate
- 150 grams unsalted butter, cut into small pieces
- 100 ml fish stock
- 100 ml dry white wine
- 1 tablespoon finely chopped fresh basil
- 1 ripe medium-size tomato, seeded and finely chopped
- 1 teaspoons fresh lemon juice
- 2 teaspoon snipped fresh chives
- Salt and freshly ground black pepper, to taste
