Preparation Method :
- Preheat a grill. Gut the fish and rinse it well. Pat dry and sprinkle the cavity with salt, pepper and lemon juice. Place sprigs of herbs inside.
- Make 3 diagonal cuts on the sides of the fish with a sharp knife. Place the fish on the grill rack and sprinkle with oil and lemon juice.
- Cook on both sides until golden brown and crisp. This should take about 8-10 minutes per side, depending on the thickness of the fish.
- To make perfect lemon wedges, first cut the ends off the lemons, then cut in 4 or 8 wedges and remove the membrane and seeds.
- If using vine leaves preserved in brine, rinse them well. If using fresh vine leaves, pour over boiling water and leave to stand for about 10 minutes to soften slightly.
- Drain and allow to cool. Line a large serving platter with the vine leaves and when the fish is cooked place it on top of the leaves. Serve surrounded with lemon wedges.
