- If cooking whole fish, slash one side diagonally two or three times so that the heat can penetrate. Line the grill (broiler) pan or a shallow metal tray with foil and place under high heat for 3 minutes.
- Add oil and heat until the foam subsides. Meanwhile, coat the fish lightly with seasoned flour.
- Place the fish in the pan and turn until coated in the oil, then cook without turning until the flesh turns white and flakes easily when tested with a fork - this will take 8 minutes for 2.5 cm/1 inch thick fish, 5 minutes if thinner.
- Serve immediately.
