POT-ROASTED PORK WITH MADEIRA

2 hours 10 minutes

Preparation Method :

  • Heat the butter in a flameproof casserole and add the onion, carrots, celery and mushrooms. Cover and cook for 5 minutes.
  • Place the pork on the vegetables, add the thyme and bay leaf to the pan, and add salt and pepper to taste.
  • Pour in the Madeira, cover tightly, and cook over a low heat for 2 hours or until the meat is very tender. Remove the pork and keep warm.
  • Discard the bay leaf and puree the sauce and vegetables in a blender, or push through a sieve (strainer). Reheat the sauce until boiling and adjust the seasoning.
  • Serve the meat sliced with sauce, boiled new potatoes and Spiced Green Beans.
  • Garnish with fried mushroom caps and serve immediately.

INGREDIENTS

  • 100 grams butter
  • 2 onion, finely chopped
  • 4 carrots, finely chopped
  • 4 sticks celery, finely chopped
  • 100 grams mushrooms, thinly sliced 
  • 2 hand of pork, boned
  • 2 teaspoon fresh or ½ teaspoon dried thyme
  • 2 bay leaves
  • Salt and freshly ground pepper 
  • 500 ml Madeira
