PORK AND HERBED PEPPER SKEWERS

Preparation Method :

  • Fry the breadcrumbs in butter or oil with garlic until lightly golden. Remove from heat.
  • Stir in parsley, thyme, oregano, lemon rind and black pepper to taste.
  • Spoon a little breadcrumb mixture onto each pepper strip and roll up.
  • Thread the diced pork on to skewers, alternating with pepper rolls and bay leaves.
  • Brush with a little oil and cook under a preheated grill, turning frequently for 8 - 10 minutes or until pork is cooked and golden.
  • Squeeze a little lemon juice over kebabs and serve.

INGREDIENTS

  • 500 grams lean diced pork 
  • 25 grams breadcrumbs, made from stale bread
  • 2 tablespoon butter 
  • 1 clove garlic, crushed
  • 1 roasted red pepper, 1 inch strips
  • 3 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh lemon thyme
  • 1 teaspoon chopped fresh oregano
  • Grated rind of 1 lemon
  • Freshly ground black pepper
  • Bay leaves
  • Lemon juice
