PORK AND HERBED PEPPER SKEWERS

Preparation Method :
- Fry the breadcrumbs in butter or oil with garlic until lightly golden. Remove from heat.
- Stir in parsley, thyme, oregano, lemon rind and black pepper to taste.
- Spoon a little breadcrumb mixture onto each pepper strip and roll up.
- Thread the diced pork on to skewers, alternating with pepper rolls and bay leaves.
- Brush with a little oil and cook under a preheated grill, turning frequently for 8 - 10 minutes or until pork is cooked and golden.
- Squeeze a little lemon juice over kebabs and serve.
INGREDIENTS
- 500 grams lean diced pork
- 25 grams breadcrumbs, made from stale bread
- 2 tablespoon butter
- 1 clove garlic, crushed
- 1 roasted red pepper, 1 inch strips
- 3 tablespoon chopped fresh parsley
- 1 teaspoon chopped fresh lemon thyme
- 1 teaspoon chopped fresh oregano
- Grated rind of 1 lemon
- Freshly ground black pepper
- Bay leaves
- Lemon juice
