GRILLED SKEWERED PORK FILLET

Preparation Method :
- Pat dry the fillets with kitchen paper and cut into thick slices. Halve the prosciutto slices.
- Cut the bread slices into quarters or pieces just a little larger than the pork.
- Thread the skewers first with a piece of bread, then a piece of the prosciutto folded over to the same size, then a pork slice.
- Repeat sequence twice, ending with a piece of bread. Repeat with remaining ingredients to make 8 skewers.
- Brush skewers with a little oil and season to taste with black pepper and rosemary leaves.
- Cook over a preheated hot barbecue or under a grill for about 10 minutes, until meat is cooked through and bread is crisp and golden. Serve hot with salad.
