MARINATED LAMB SKEWERS

Preparation Method :
- Place the lamb cubes in a shallow dish. Combine the marinade ingredients and pour over the lamb.
- Stir to mix, cover and store in the refrigerator for at least 3 hours, stirring from time to time.
- Remove the lamb from the marinade, dry the pieces well, then thread on to 4 greased kebab skewers, alternating with the onions, mushrooms, tomatoes and pepper. Preheat the grill to moderate.
- Place the skewers on the grill rack and grill for about 15 minutes, turning frequently and basting with the marinade, until the lamb is cooked but still slightly pink inside.
- Transfer the skewers to a heated serving dish, garnish with bay leaves.
- Serve immediately.
INGREDIENTS
- 1½ kilogram boneless lamb, trimmed of fat and cut into 1 inch cubes
- 15 button onions, peeled
- 15 button mushrooms, wiped and trimmed
- 8 small tomatoes
- 2 large green pepper, cored, deseeded and cut into 1 inch pieces
- 8 bay leaves, to garnish
Marinade
- 2 clove garlic, peeled and crushed
- Salt
- Freshly ground black pepper
- Juice of 4 large lemons
- 4 tablespoons tomato puree
- 1 teaspoon Tabasco
