LAMB CHOPS WITH LEMON AND ROSEMARY

- Preheat a grill pan over medium heat until very hot. Using a pastry brush, lightly coat both sides of the chops with lemon juice and season with half of the rosemary, salt, and pepper.
- Add to the pan and grill for 5minutes. Brush with lemon juice and season with the remaining rosemary, salt, and pepper.
- Turn and grill for another 5 more minutes or to your liking. Transfer the chops to a warm platter and let stand loosely covered for 3-5 minutes before serving.

- 6 loin lamb chops (1 ½ inches thick), rinsed and patted dry
- 70 ml fresh lemon juice
- 50 grams fresh rosemary sprigs
- Freshly ground pepper and salt
