COWBOY PORTERHOUSE STEAK WITH GREEN PEPPERCORN SAUCE

- Pat the steak dry with a paper towel. Season each side with salt and pepper to taste and let stand at room temperature, covered for at least 30 minutes.
- Preheat a grill pan over medium heat until very hot. Place the steak in the pan and cook without moving until seared and nicely browned on one side, about 5 - 10 minutes.
- Turn the steak and cook for 5 more minutes for medium rare or until the center of the steak springs back when pressed.
- Transfer the steak to a cutting board and let rest for about 5 minutes.
- Spoon the Green Peppercorn Sauce on top and Serve immediately on warm plates.
