THAI GRILLED CHICKEN

Preparation Method :
- Marinade: Wash coriander well and shake dry. Cut off roots and green stems and chop roughly, keep the green sprigs aside.
- Except chicken place all the ingredients with vegetable oil in a food processor and process until smooth.
- Place chicken in a bowl, pour over marinade, toss well to combine and set aside to stand for 1 hour.
- Place chicken on a foil- lined grill rack and cook under a preheated medium grill for 5 minutes each side or until chicken is cooked through.
- Serve chicken on bed of boiled rice, crisp lettuce cups and sliced cucumber, garnish with coriander sprigs.
INGREDIENTS
- 1 kg boneless chicken breast or thigh fillets
- Coriander Marinade
- 75 ml IDHAYAM Sesame oil
- 1 teaspoon freshly ground black pepper
- 1 teaspoon sugar
- 1 teaspoon ground turmeric
- Coriander, roots, Stem and leaves
- Coriander sprigs, to garnish
- 4 garlic cloves
