ROASTER IN SUPREME SAUCE
The Roaster in Supreme sauce is made of healthy ingredients like roasting chicken, poultry stock, lemon, salt, pepper, flour, and butter. This dish needs a four-step preparation, so you can cook it for about sixty minutes and can serve for about six persons.

- Clean and truss the roaster. Rub with a lemon to keep in white. Place it in your pressure cooker, add poultry stock and season with salt and pepper.
- Close and cook for 51 minutes from the pressure cooker hissing.
- After cooking, remove the roaster and keep it warm.
- Make a white roux with butter and flour, and ¾ litre of chicken stock and cook for 10 minutes over a low fire. Add cream and correct the seasoning. Place the roaster on a platter.
- Serve the sauce in a gravy boat.

- 3 litres poultry stock
