PESTO CHICKEN WITH FETTUCCINE
The Pesto chicken with fettuccine can truly change your daily appetite. With its perfect ingredients, you shouldn’t miss its tempting aroma and taste. To prepare this dish, you don’t need to spend too much time because you can easily prepare this within 40 minutes.

- To make the pesto : In a food processor or blender ,combine parsley, basil, garlic, and pine nuts. Process until a paste forms.
- With the motor running, add the olive oil slowly and continue processing until well blended.
- Preheat a grill pan over medium heat until very hot. Season both sides of the chicken breasts with half of the salt and all of the pepper.
- Add the chicken to the pan and cook for about 5 minutes. Turn and cook for further 5 more minutes or until the center of the chicken springs back when pressed.
- While the chicken is cooked , bring a large pot of water to boil. Add remaining salt and fettuccine.
- Cook at a rolling boil until the pasta is just tender for about 5- 7 minutes. Drain the pasta well and toss with half of the pesto.
- Transfer the chicken to a cutting board, spread the remaining pesto on both sides, and cut into crosswise strips.
- Place equal portions of the pasta on warm plates. Drape the chicken over the pasta and serve.
INGREDIENTS
Pesto
- 100 grams fresh parsley leaves
- 220 grams fresh basil leaves
- 3 cloves Roasted Garlic
- 1 tablespoon pine nuts
- 75 ml light olive oil
- 2 boneless, skinless chicken breast halves, rinsed and patted dry
- Salt and freshly ground pepper
- 100 grams dried fettuccine
