- To make the Caesar dressing: Combine the lemon juice, garlic, mustard, and anchovies In a food processor or blender, With the motor running, gradually add the olive oil and blend until smooth.
- Preheat a grill pan over medium heat until very hot. Season both sides of the chicken with salt and pepper. Add to the pan and cook for 5 minutes.
- Turn and cook for further 5 minutes or until the center of the chicken springs back when pressed .
- Transfer the chicken to a cutting board and slice into strips crosswise.
- Tear the lettuce into large pieces and place in a large glass or nonreactive metal bowl. then add the Parmesan and chicken and toss again gently. Serve immediately.

Caesar Dressing
- 3 tablespoons fresh lemon juice
- 2 cloves Roasted Garlic
- 1 teaspoon Dijon-style mustard
- 6 oil-packed flat anchovy fillets, drained and coarsely chopped
- 100 ml light olive oil
- 2 boneless, skinless chicken breast halves rinsed and patted dry
- Salt and freshly ground pepper , to taste
- ½ head romaine lettuce, washed and dried
- 100 grams freshly grated Parmesan cheese
