- Preheat the grill (broiler) to medium and cover the rack with oiled foil.
- Brush the chicken breasts with melted butter and cook for 10 minutes with the skin side down, brushing once or twice with butter. Combine the ingredients for the devil mixture.
- Remove the chicken from the grill (broiler) and, when it is cool enough to handle, press the crumb mixture firmly over the skin side of each breast.
- Place the chicken on the rack again, crumb side up, and grill (broil) at medium heat for a further 10 to 12 minutes, until the topping is golden brown and the juices run clear when the flesh is pierced with a fine skewer. (If the crumbs seem to be coloring too much, turn the heat down or move the chicken further away from the heat.)
- Serve immediately with Broccoli in Wine and grilled tomato halves.
