CHICKEN WITH ASPARAGUS

Preparation Method :

  • Place the chicken breasts under a preheated hot grill and cook for about 15 minutes until tender.
  • Meanwhile, cook the asparagus in boiling salted water for about 12 minutes until just tender.
  • Arrange the asparagus on a heated serving dish and place the chicken breasts on top. Keep hot.
  • To make the sauce, melt the margarine in a saucepan and add the garlic.
  • Cook gently for a few seconds then stir in the corn flour. Cook for 2 minutes, stirring. Remove the garlic.
  • Add enough skimmed milk and chicken stock to make a thin sauce.
  • Add the bay leaf and cook for a few minutes, stirring, until the sauce thickens. Add the sherry and remove the bay leaf.
  • Pour over the chicken breasts and asparagus. Sprinkle oil the Parmesan cheese and place under a preheated hot grill until lightly browned.
  • Serve immediately.

INGREDIENTS

  • 8 chicken breasts
  • 750 grams asparagus
  • Salt

Sauce

  • 50 grams margarine
  • 2 clove garlic, peeled
  • 2 dessertspoon corn flour
  • 500 ml skimmed milk
  • 500 ml chicken stock
  • 2 bay leaves
  • 4 tablespoons sherry
  • 50 grams grated Parmesan cheese
