CHICKEN WITH ASPARAGUS

Preparation Method :
- Place the chicken breasts under a preheated hot grill and cook for about 15 minutes until tender.
- Meanwhile, cook the asparagus in boiling salted water for about 12 minutes until just tender.
- Arrange the asparagus on a heated serving dish and place the chicken breasts on top. Keep hot.
- To make the sauce, melt the margarine in a saucepan and add the garlic.
- Cook gently for a few seconds then stir in the corn flour. Cook for 2 minutes, stirring. Remove the garlic.
- Add enough skimmed milk and chicken stock to make a thin sauce.
- Add the bay leaf and cook for a few minutes, stirring, until the sauce thickens. Add the sherry and remove the bay leaf.
- Pour over the chicken breasts and asparagus. Sprinkle oil the Parmesan cheese and place under a preheated hot grill until lightly browned.
- Serve immediately.

- 750 grams asparagus

- 50 grams margarine
- 2 clove garlic, peeled
- 2 dessertspoon corn flour
- 500 ml skimmed milk
- 500 ml chicken stock
- 2 bay leaves
- 4 tablespoons sherry
- 50 grams grated Parmesan cheese
