CHICKEN SATAY WITH PEANUT SAUCE

Preparation Method :
- To make the peanut sauce : Put the peanuts in a food processor or blender and process until finely ground.
- With the motor running add soy sauce, honey, plum wine, chiles, and oil with grounded peanuts , until smooth.
- Transfer to a glass or nonreactive metal bowl ,cover and refrigerate until ready to use.
- The sauce can be made 3 days in advance. Bring to room temperature before use.
- Skewer each strip of the chicken lengthwise and season to taste with salt and pepper.
- Preheat a grill pan over medium heat until very hot.
- Cook the chicken for 3-5 minutes, then turn and cook for further 3 more minutes .
- Transfer to warm platter and serve with the peanut sauce on the side for dipping.
INGREDIENTS
Peanut Sauce
- 200 grams unsalted, roasted peanuts
- 50 ml low-sodium soy sauce
- 50 ml honey
- 75 ml plum wine
- 2 small dried red chiles, stemmed and seeded
- 100 grams IDHAYAM Mantra Peanut sesame oil
- 2 boneless, skinless chicken breast halves, well rinsed,
- patted dry, and sliced into ¼ inch strips
- 10 wooden skewers, soaked in water for 15 minutes
- Salt and freshly ground pepper, to taste
