STEAMED THAI EGGS WITH PRAWNS

Preparation Method :

  • Lightly oil four large ramekin dishes. Put the prawns in a large bowl and stir in the ginger, fish sauce, garlic, soy sauce and half the spring onions.
  • Put the eggs into another bowl, whisk in the stock, oil and chilli, without letting the eggs get too frothy. Add the prawn mixture and divide among the ramekins.
  • Place the ramekins in a steamer, over a pan of simmering water, cover and cook for 15 minutes until just set. Remove from the heat and leave to cool.

INGREDIENTS

  • A little sesame oil
  • 250 grams peeled prawns
  • 2 teaspoon grated fresh root ginger
  • 2 teaspoon fish sauce
  • 2 large garlic clove, thinly sliced
  • 4 tablespoon soy sauce
  • 4 large spring onions, finely sliced
  •  6 medium or small eggs
  • 50 ml vegetable or chicken stock
  • 2 teaspoon sesame oil
  • 2 teaspoon very finely chopped fresh red chilli, plus extra to garnish
  •  Salt and ground black pepper
  • Salad of finely shredded Chinese cabbage and thinly sliced cucumber, to serve
