SHIRED EGGS WITH PANCETTA AND ROCKET

- Preheat the oven to 200°C/400°F/ Gas 6. Divide half the butter and all of the pancetta among four individual serving or gratin dishes.
- Bake for 8-10 minutes until the pancetta is sizzling, then carefully remove the dishes from the oven.
- Crack two eggs into each dish, add another knob of butter to each and sprinkle with seasoning. Return to the oven for a further 10 minutes or until the eggs are just set.
- Toss the rocket in the lemon juice and oil, and add some to each dish.

- 100 grams butter
- 150 grams pancetta, sliced
- 10 eggs
- Bunch of rocket
- Squeeze of lemon juice
- 30 ml sesame oil
- Ground black pepper
