PIPERADE

- Gently fry the pepper, chili, onion and garlic in the oil until soft. Add the tomatoes and the marjoram.
- Cook over medium heat for 10 minutes, stirring occasionally, and then pour eggs over and salt and pepper to taste.
- Increase the heat and cook, drawing the mixture from sides to middle with a palette knife until eggs are set.
- Serve immediately with a crisp green salad.

- 2 green or red pepper, cored, seeded and finely chopped
- 2 fresh chili, seeded and chopped
- 2 onion, finely chopped
- 2 garlic clove, crushed
- 6 tablespoon IDHAYAM Sesame oil
- 500 gram tomatoes, drained and chopped
- ½ teaspoon dried marjoram
- 8 eggs, beaten
- Salt and freshly ground pepper
