- Heat the fat in a large heavy- based frying pan. Add the onions and cook over a gentle heat, stirring occasionally, for about 5 minutes until softened but not coloured.
- Add the peppers, garlic and chilli powder. Cook for a further 5 minutes stirring, then add the plum tomatoes seasoning and oregano, and cook over a moderate heat for 15-20 minutes until the peppers are soft and most of the liquid has evaporated.
- Preheat the oven to 200°C/400°F/ Gas 6. Cut the bread in half lengthways, trim off the ends, then cut into six equal pieces and brush with olive oil. Place on baking trays and bake for 8-10 minutes until crisp and just turning golden.
- Heat the butter until it bubbles add the eggs and stir until softly scrambled. Turn off the heat and stir in the pepper mixture. Divide evenly among the pieces of bread and sprinkle with the basil leaves. Serve hot or warm.

- 6 red, orange or yellow peppers, seeded and chopped
- 4 large garlic cloves, finely chopped
- Pinch of chilli or hot cayenne pepper
- 750 grams ripe plum tomatoes, peeled, seeded and chopped
- 2 tablespoon chopped fresh oregano
- 4 long French stick
- 8 tablespoon sesame oil
- 4 tablespoon butter
- 8 eggs, beaten
- Salt and ground black pepper
- Basil leaves, to serve
