MARBLED EGGS

Preparation Method :

  • Place the eggs in a pan of cold water, bring to the boil and cook for about 5 minutes. Cool, then crack the shells all over.
  • Return to the pan with the tea and seasonings, add water to cover and bring to the boil. Simmer for 1½  hours, then cool in the water and peel.
  • To make the Thai fish sauce, pound the chillies and garlic to a paste in a mortar, then blend in the rest of the sauce ingredients, discarding the chilli seeds, if you prefer a milder flavour.
  • Chill until required. Serve the sauce with the eggs, or use as a garnish.

INGREDIENTS

  • 6 eggs
  • 3 tablespoon dry strong tea leaves
  • 2 teaspoon salt
  • 4 star anise
  • 5 cardamom pods

For the Thai fish sauce

  • 4 red chillies, finely chopped
  • 4 garlic cloves, crushed
  • 5 tablespoon hoi-sin sauce
  • 2 tablespoon soy sauce
  • 2 tablespoon fish sauce
