GOAT’S CHEESE SOUFFLE

Preparation Method :

  • Melt the butter in a heavy-based saucepan over a medium heat. Stir in the flour and cook until slightly golden, stirring occasionally.
  • Pour in half the milk, stir until smooth, then add the remaining milk and the bay leaf. Season with salt and plenty of pepper and nutmeg.
  • Reduce the heat to medium- low, cover and simmer gently for about 5 minutes, stirring occasionally.
  • Preheat the oven to 190°C/375°F/ Gas 5. Butter a souffle dish and sprinkle with Parmesan cheese. Remove the sauce from the heat and discard the bay leaf. Stir in the other cheeses.
  • In a clean grease-free bowl, using a balloon whisk or electric mixer, beat the egg whites slowly until they become frothy.
  • Add the cream of tartar, increase the speed and continue beating until they form stiff peaks that just flop over a little at the top.
  • Stir a spoonful of beaten egg whites into the cheese sauce to lighten it, then pour the cheese sauce over the rest of the whites.
  • Using a rubber spatula or large metal spoon, gently fold the sauce into the whites, cutting down through the centre to the bottom, then along the side of the bowl and up to the top, until the cheese sauce and egg whites are just combined.
  • Gently pour the souffle mixture into the prepared dish and bake for about 30 minutes until puffed and golden brown. Serve at once.

INGREDIENTS

  • 3 tablespoon butter, plus extra for greasing
  • 3 tablespoon plain flour
  • 250 ml milk
  • 2 bay leaf
  • Freshly grated nutmeg
  • Freshly grated Parmesan cheese, for sprinkling
  • 50 grams herb and garlic soft cheese
  • 200 grams firm goat's cheese, diced
  • 8 egg whites, at room temperature
  • 1 teaspoon cream of tartar
  • Salt and ground black pepper
