EGGS FLAMENCO

This bacon and onion filled Eggs Flamingo will fill your stomach with satisfaction. The bacon flavor is really enhanced due to the other flavorings like pea, chopped parsley, onion, potatoes and tomatoes. This is a must-try for you and your family.
Serves :

Preparation Time :
30 minutes

Cooking Time :
40 minutes

Preparation Method :

  • Heat the oil in a pan, add the onion, peppers and bacon and fry for 5 to 6 minutes.
  • Add the potatoes and cook until lightly browned. Add the peas, tomatoes, parsley, and salt and pepper to taste.
  • Cook gently for 10 minutes, adding a little water, if necessary, to prevent the mixture sticking.
  • Turn the vegetable mixture into a greased shallow ovenproof dish. Make 4 hollows in the mixture and break an egg into each one.
  • Cook in a preheated moderate oven for 15 minutes until the egg whites are just set.
  • Serve immediately.

INGREDIENTS

  • 4 tablespoons IDHAYAM Sesame oil
  • 2 onion, peeled and chopped
  • 4 red peppers, cored, deseeded and cut into strips
  • 250 grams piece smoked streaky bacon, derinded and cut into strips
  • 4 potatoes, boiled and diced
  • 200 grams shelled fresh or frozen peas
  • 8 tomatoes, skinned and chopped
  • 2 tablespoon chopped parsley
  • Salt
  • Freshly ground black pepper
  • 8 eggs
